So as it turns out, mangoes are kind of amazing. As in you know you like them but you’re not sure how much until they’re all dressed up in their killa heels and slinky black dress.
And I don’t mean to sound like a broken record, but combining mangoes with the fresh scallops from Paradise Seafood is simply and surprisingly blissful. I don’t know how, but all of their seafood that tastes like tiny sweet little lobsters. You put a perfect sear on one and hit it with this vinaigrette and you are dunzo.
2 ripe mangoes, peeled and rough chopped
1 lime, juice and zest
1/3 cup rice wine vinegar
1 tablespoon, fresh cilantro
1 teaspoon honey
salt to taste
1/2 cup of olive oil
- Place all ingredients except oil, 1 mango in a blender or food processor.
- Slowly add oil. Once blended, you are good to go.
- Toss the chopped avocado and mango together and reserve to top scallops with.
- Heat a non stick skillet on high heat.
- Dry off moisture from scallops. The Chef places them in between 2 paper towels. Usually on Bonnie’s counter instead of a plate like a normal person, but it’s your life. Do what you need to do.
- Salt and pepper scallops. Add 1 tablespoon of vegetable oil and 1 teaspoon of butter to the skillet.
- Add scallops to the pan and be sure not to mess with them or they will stick. Patience, my dear.
- Sear 2 minutes on each side for medium rare. “Cook longer for you and Bonnie,” says The Chef. Yes, I will eat meat that is still mooing, but for seafood I prefer it well done.
- Top scallops with mango vinaigrette and serve with mixed greens. Refreshing and tangy. Nothing better.
This is the caramelized alternative to The Chef’s Ridiculously Perfect Pickled Red Onions, and if they are any indication, you should make a batch and top everything with them immediately.These are great on roasted meat, steak sandwiches, burgers, pizza, brats and even scrambled eggs.
My personal favorite way to serve these is over cream cheese with crackers. Not because of my well-documented cream cheese fixation, but because of the time Katers brought over a bottle of Worcestershire to top cream cheese with when Susu had actually told her to get PickaPeppa. It’s not quite up to the level of the Chicken Parmesan debacle, but it makes me smile nonetheless.
4 red onions, sliced very thin
1/3 cup of honey
1/2 cup of balsamic vinegar
salt and pepper to taste
3 tablespoon of vegetable oil
- Saute onions in oil over medium low heat. Add a good pinch of salt and pepper. Cook onions for about 1 hour, or until caramelized.
- Add honey and balsamic vinegar. Store in a air tight container in fridge for up to 1 month.
I hate red onions. I love pickled things. By all accounts, this dish should break even at best. It does SO much more. These were without a doubt the highlight of The Chef’s birthday meal (and, of course, one of the parts he prepared himself).
They have the perfect crisp, salty, spicy bite, and I have no doubt they’re fantastic on everything. Barrett likes to use them on tacos, sandwiches, burgers or anything braised. I like to eat them straight.
2 red onions sliced very thin
12 oz of red wine vinegar
couple squirts of honey
salt and pepper to taste
- Heat vinegar, honey, salt, and pepper.
- Once warm, pour over sliced red onions.
- Cool and refrigerate until ready to use.
I think these are even better a few days later, so keep your hands off for a while. If you can.
