I know it is not artichoke season, but I love them. If I can still find them at my market, I will make them. In Rome I had the best artichoke I have ever eaten at Il Matriciano restaurant near the Vatican. It was addicting, and I could have eaten about 10 of them. Below is a traditional Roman artichoke recipe from Mario Batali. -ts
1 tablespoon chopped fresh parsley
3 tablespoons chopped fresh mint
2 cloves garlic, finely chopped
Salt, to taste
1 tablespoon plus 3/4 cup extra-virgin olive oil
6 artichokes, halved and trimmed outer leaves, choke removed, held in acidulated water (fancy talk for lemon water)
1/2 cup dry white wine
3/4 cup boiling water
- In a small bowl, combine the parsley, mint, garlic, salt and 1 tablespoon olive oil.
- In the cavity of the artichoke from which the choke was removed, place 1 teaspoon of the herb mixture. Repeat this procedure with the remaining chokes.
- Arrange all chokes in a deep pan that keeps them close together, in other words, one that doesn’t give them room to fall over.
- Add the wine, boiling water, remaining oil and a pinch of salt.
- Cover and simmer on the stovetop 1 hour. Serve hot or at room temperature.
You know how sometimes people think hot girls are automatically stupid? Like there’s no way that something can look that good on the outside and not be either dumb or awful on the inside? Well, I think this salad is that hot girl. And this one actually reads Dostoyevsky for fun and got a perfect score on her ACT.

What I’m sayin’ is there’s substance here as well as pretty. The avocado and cheese are rich, the tomatoes are juicy and tangy, and the croutons give you the perfect amount of crunch. Dress all that up in Balsamic and drive it around town in your new convertible? It will be like Weird Science in here. And everybody wants that. (Minus Chet.)
1 tbsp Dijon mustard
1/4 cup balsamic vinegar
2 tsp honey
3/4 cup olive oil
juice of half a lemon
salt to taste
- Mix all ingredients except oil.
- Slowly add oil while constantly whisking until it emulsifies.
4 tomatoes, chopped
2 orange tomatoes, chopped
2 yellow tomatoes, chopped
1 ripe avocado, chopped
1.5 cups of diced mozzarella
1 cup of fresh croutons
salt to taste
1 tbsp mint or basil (optional)
- Mix together and toss in dressing.
- Eat and bask in the afterglow.

Well alright then. Barrett suggests you make a large batch of the paste, use a few tablespoons to make the sauce, and freeze the rest for future use (the recipe makes about 2 cups). As we learned on the food network, you can freeze portions of this in ice-cube trays and use them one-at-a-time. My inner Martha loves that time-saver crap.
2 1/2 Thai chilies
1 tbsp cumin seed
2 1/2 tbsp coriander seed
1 tbsp black pepper
1 tbsp kosher salt
1/2 cup cilantro leaves and stems
1/2 cup basil leaves
1/2 cup mint leaves
1/2 tsp turmeric (ginger-ish flavor: warm, bitter, spicy)
2 tsp of galangal, minced (citrus-pine-earthy flavor)
1 tbsp of garlic, minced
1 1/2 tbsp of lemongrass, minced, white part only
4 kaffir lime leaves, minced
1/4 cup lime juice
1/4 cup fish sauce
1/2 cup shallots, minced
1 cup peanut oil
hot coconut milk
- Place all the dried spices (chilies through salt) in a saute pan and toast over medium heat. Once toasted, grind in a spice grinder.
- Blanch and shock (meaning boil for a sec and then plunge into cold water to stop the cooking) the cilantro, basil, and mint in a salted water. Squeeze dry.
- Place all ingredients except oil in blender and puree until smooth.
- While the blender is running, slowy drizzle in oil. Season with salt and pepper.
- Mix a few tablespoons with hot coconut milk until sauce reaches desired consistency.
- Serve with mussels or scallops over risotto or use as a soup base. If you’re looking for a full recipe, swap out the red curry in this mussel recipe for this green one. Bellissimo!
This is a great dip or sauce to use with chicken, lamb or with pita chips. I make mine with extra garlic. This is especially good served along side Herb Rack of Lamb. -ts
2 small containers of Greek yogurt (such as FAGE or Oikos)
2 cloves garlic, very finely minced
5-7 mint leaves finely chopped (I guess you could get lazy and use dried; I would never)
2 small cucumbers peeled and finely chopped
salt, pepper, and cayenne pepper (optional) to taste
a few squeezes from a lemon
a couple drops of olive oil
- Prepare ingredients
- Mix everything together in a bowl except; All measurements are best done by taste, so use more mint if you like things minty or more garlic if you prefer. This needs to be refrigerated for at least an hour before serving, but the longer the better.
