It’s spicy up in here, y’all.
I feel like everywhere I look these days, there is a different colored bell pepper staring up at me, like a little edible Oompa Loompa. (Sometimes I like to imagine veggies are little people.. but then that brings up the distasteful idea of murdering them just so I can have salsa or whatever, and that’s a little more unseemly. Except for those Veggie Tales effers. Those creepy little things can burn.)
Anywho, there’s nothing better to do with these ripe little suckers than bathe them in a little olive oil, dress ’em up in garlic and send them out on the town.
The Chef tells me that “peperonata” is an Italian condiment for meats, but it can also be a great fish-topper and is yummy served cold as part of an antipasta course. I just think it’s fun to say.
As long as you don’t take it too far like Giada de Laurentiis (You’re Italian! We get it!). If I hear her over-pronounce “spahhh-gihhh-ti” or mohhh-zah-reh-lllla” one more time, I’m gonna smack the perky right off of her face.
1/4 cup olive oil
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 orange bell pepper
1.5 tbsp of white balsamic vinegar
4 garlic cloves, chopped
salt to taste
2 tbsp finely chopped fresh rosemary
- Slice peppers and onions thin.
- Heat oil in a large skillet on medium low heat.
- Add onions and peppers and salt. Cook for 30 to 40 minutes.
- Then add garlic, rosemary, and vinegar. Cook for about 15 minutes. Voila.

Whenever I mention this to The Chef, he looks slightly befuddled and a little grossed out (I think the term “boat” evokes images of cruise ships and buffet lines or something). In my ever-present quest to prove him wrong, I am making him breakfast for dinner tonight, and this is on the menu.
Big D has been making this for years, and it is always quickly devoured. My dad actually once delivered one to my cousin’s house, and her husband (who is kept on a tight-but-healthy regimen) answered the door. He ate the whole thing by himself as though it were an actual 1-person sized sandwich. That is hilariously fat to the adorable power.
1 package hot sausage
1 onion, diced
1 green pepper, diced
1 package mushrooms, sliced
2 cups Mexican cheese, shredded
1 tbsp Worcestershire
1 tbsp yellow mustard
1 loaf bakery bread, not sliced
hot sauce, salt and pepper to taste
- Preheat the oven to 350.
- Remove most of the bread from the inside of the loaf, leaving an inch or so around the outside (the crust and a little bit of bread cushion is the main event here, so as long as you leave those, you’re golden).
- Cook sausage, onion, pepper and mushrooms. Drain.
- Return to skillet and add Worcestershire, mustard and seasoning. Add cheese and mix. (This is yet another recipe like Big D’s Breakfast Casserole where the more you experiment, the better it gets. Different kinds of cheese, spices and veggies are super fun in here. Live a little.)
- Stuff “boat” with sausage mixture, cover with foil and bake just until crusty and heated through (20 minutes).
- Slice and scarf. And drop a slice by my cousin’s house.
Sidenote: If you have any leftover filling, it’s stupid good on chips, perhaps even mixed with a little cream cheese for dipping. I know, I KNOW, cream cheese/dip fixation. Work out your own issues first before you come at me, OK? You’re not my real dad anyway.
In a rare wave of optimism, I actually thought it was not going to be cold enough again this spring for us to post this, but once again, Mother Nature has decided to play dirty. Luckily this recipe includes two of my most favorite things, so I’ve decided to look at this as a positive.

, you should probably just go ahead and make this now.
On a related note, watch yo’self when you ignite the brandy in that filet recipe. One Covington resident (who shall remain nameless) almost burned down his house with that step. And I think we’d all agree that Covington law enforcement and emergency services probably have their hands full as it is.
2 lbs ground beef
1 large onion, diced
1 green bell pepper, diced
1 poblano pepper, diced
2 -3 Red Stripe beers
2 packages chili seasoning
2 cans of rotel, 1 hot and 1 mild
1 30 oz can stewed tomatoes
3 bay leaves
1 can of kidney beans
1 tablespoon of sugar
- In a Dutch oven, brown beef and drain.
- Return to heat and add onions and peppers. Cook about 15 mintues on medium heat.
- Add tomatoes, beer, chili seasoning, rotel, and bay leaves.
- Simmer for several hours. (The longer you simmer, the better it will be.)
- Rinse and drain kidney beans. Add right before seving.
- Serve with Mexican Crema, cheddar cheese, and chopped green onions. Oh, and the rest of that Red Stripe. Just for good measure.
