While we are nothing if not traditional around the holidays, this was one of my favorite new recipes from Akin Holidays 2K11. It was, as per usual, from my favorite old cookbook, Heart & Soul.
While I generally jump at the chance to make a new variation of Dot’s Breakfast Casserole, I saw this and knew that this sausage/mushroom/HOLLANDAISE concoction was clearly meant for me. And as with our standby breakfast casserole, it is stupid easy to make and just plain satisfying.
The interesting thing here is that it’s mushrooms (instead of the usual bread) that provide much-needed texture to the eggy goodness here. Also, while this is pretty much the same recipe you’ll find in H&S, I have taken some liberties (because what’s not better with Worcestershire?) and shortcuts (because water baths are for babies, not food), so it won’t match up exactly if you get to fact-checking.
1 lb hot sausage
8 oz portabella mushrooms
8 oz button mushrooms
dash of Worcestershire sauce + Cavendar’s
2 cups shredded cheddar cheese
8-10 eggs, beaten thoroughly
- Preheat oven to 375.
- Grease 9×13 in. baking dish and spread cheddar cheese on the bottom.
- Cook sausage, drain, and layer on top of cheese.
- In the drippings from the sausage, cook the mushrooms until just tender, adding Worcestershire and seasoning as needed.
- Add into dish on top of sausage and pour egg mixture over the top.
- Bake for 45 minutes or until the liquid (egg) in the middle of the casserole is firm.
- Serve and top individual portions with Hollandaise. Nom nom nom.
This cornbread is the counterpart of yesterday’s veggie soup. Since The Chef and I have spent all day trying to decide which variety of soup/gumbo/stew we will be making for New Year’s Day, this was a no-brainer side dish.
Jalapeno cornbread is a great for soups because it will work for sopping but also has enough of a spicy kick to cut through the dense corn-bready-ness (word. total word.).

Martha Stewart. (Which is why I linked that Jemima example to Wal-Mart instead of K-Mart. Your lucrative deal with a giant discount store holds no water with us, Martha!)
Claire also reminds us that you have to heat up the tins before adding the batter so the bottoms of the muffins are crunchified. Word to you. And your mother.
2 cups cornmeal
1 1/4 cup buttermilk
3 tbsp veggie oil
3/4 cup sharp cheddar cheese
1 can creamed corn
chopped jalapenos (as many as you want)
- Preheat oven to 425.
- Mix together all ingredients. The batter should be easy to stir and smooth but not runny. If it’s too thick, add more buttermilk.
- Take muffin pan and put 1/2 cap of veggie oil in each tin. Put in the oven at 425 until smokey. (This is the non-negotiable step that makes the bread crunchy all the way around.)
- Take out, add mix and cook at 425 for approx. 45 min.
If you have never had the pleasure of anything Boar’s Head, I must suggest you get your butt up to (preferably the new awesome) Kroger (by the Racquet Club) and purchase something immediately. All of their stuff is good, but their Horseradish Cheddar is simply to die.
It makes a great sandwich, but the Thanksgiving I decided to unnecessarily carbo-load my family with 3 different kinds of mac n cheese, it also made for a great cheese sauce. You could actually even add bacon to this and make it the main attraction. Nobody’d be mad. Just sayin’.
1 box spiral pasta, cooked and drained
1/2 cup butter
1/2 cup all-purpose flour
2 cups cream
1.5 cups milk
salt and pepper to taste
1 block Boar’s Head Horseradish Cheddar, shredded
1 can diced tomatoes, drained
Cavendar’s to taste
- Preheat oven to 325.
- In a saute pan, melt butter. Whisk in flour and stir constantly until it makes a blonde roux.
- Add cream. Cook until it reaches a simmer, whisking constantly.
- Add milk. Bring to a simmer.
- Add cheddar cheese and mix until melted.
- Toss pasta in sauce, add tomatoes and place in a baking dish.
- Sprinkle with parmesan and bake for 25 minutes.
This is the corn dip that Emily so famously ate the morning after Pat Benatar… after it sat in an iceless cooler all night. Yep. So that happened.
Also, this recipe makes what we in the biz call “a shat ton,” so divide this in half if you’re not feeding a crowd. Or Emily.
3 (11 ounce) cans Mexican-style corn***
1 (4 ounce) can diced green chiles
1 can Rotel, drained
1 bunch green onions, chopped (green parts only)
1/2 (8 oz) container sour cream
1 jalapeno pepper, diced
1.5 cups mayonnaise
10 oz shredded sharp cheddar cheese
hot sauce and Cavendar’s or Tony Chachere’s to taste
- In a medium-size mixing bowl, combine Mexican-style corn, green chilis, green onions, sour cream, jalapeno pepper, mayonnaise, and cheddar cheese. Mix well.
- Cover and refrigerate (at least half an hour, but overnight is best). Serve with chips and keep away from Lowery.
***I just made this using 4 ears of fresh corn cut off the cob instead of the cans, and I must say DO IT. So easy and yet so much better. (6/30/11)
