I know it is not artichoke season, but I love them. If I can still find them at my market, I will make them. In Rome I had the best artichoke I have ever eaten at Il Matriciano restaurant near the Vatican. It was addicting, and I could have eaten about 10 of them. Below is a traditional Roman artichoke recipe from Mario Batali. -ts
1 tablespoon chopped fresh parsley
3 tablespoons chopped fresh mint
2 cloves garlic, finely chopped
Salt, to taste
1 tablespoon plus 3/4 cup extra-virgin olive oil
6 artichokes, halved and trimmed outer leaves, choke removed, held in acidulated water (fancy talk for lemon water)
1/2 cup dry white wine
3/4 cup boiling water
- In a small bowl, combine the parsley, mint, garlic, salt and 1 tablespoon olive oil.
- In the cavity of the artichoke from which the choke was removed, place 1 teaspoon of the herb mixture. Repeat this procedure with the remaining chokes.
- Arrange all chokes in a deep pan that keeps them close together, in other words, one that doesn’t give them room to fall over.
- Add the wine, boiling water, remaining oil and a pinch of salt.
- Cover and simmer on the stovetop 1 hour. Serve hot or at room temperature.
It’s that time of year again, lake rats: The 4th of July. And in honor of our upcoming trip to Tims Ford, I’m giving up one of my favorite have-around lake snacks: my version of the Chicken Pasta Salad from Bread & Company. [That stuff is way too expensive to buy by the pound, so I piddled around until I figured out a pretty close imitation. Grommet-style.]
This stuff keeps incredibly well, so you can have it pre-boat, mid-beverage and even post-broken-foot if you are as unlucky around water as I seem to be.
And it makes a great base if you’re, say, drowning your sorrows in Firefly so you can limp down to the driveway to play beer die. Not that that’s ever happened.
Anywho, this recipe uses roasted red peppers rather than raw because I ain’t much for the crunch, so tinker with this as you must. Freedom of choice is American as hell.
3 chicken breasts, cut into thin strips
1 package thin angel hair, cooked*
1 can artichokes, drained and coarsely chopped
1 jar roasted red peppers, chopped
1 bunch green onions, chopped (just the green parts)
2 cups mayo (plus as much as you need for your desired level of moisture. Eww. Hate that word.)
splash of Italian dressing (optional)
salt and pepper to taste (or Cavendar’s if you’re Akin through-and-through)
- Season chicken and cook in skillet with olive oil. (Taco seasoning + Tony’s is a winning combination for me.)
- While pasta is still warm, add mayo and all other ingredients.
- Cover and chill at least one hour (but this is even better after it sits overnight). Season to taste.
Eat on it. It’s the yum.
*I always undercook the pasta when I know I’m making this a day or two in advance because the pasta will soften as it sits in the fridge. Adjust your level of al dente accordingly.
Rolfes used to make this all the time in college, and it’s a hot, easy, always-devoured dip that doesn’t miss. I like to throw in a little cayenne pepper to keep things spicy, but it’s just as good old school.
2 cans of artichoke hearts
1 cup mayo
1 cup parmesan cheese
- Preheat oven to 350.
- Drain artichoke hearts. Coarsely chop.
- Mix all ingredients. Put in a baking dish and top with a little extra parm.
- Bake for 15-20 minutes or until golden brown.
Serve with frito scoops or assorted crackers, and get your hands out of the way. I’ve seen people become violent over this at many a Nashville Supper Club. And to that I say “Well done, ladies!” Miss Hutchison would be so proud, may she rest.
I think we’d all agree that Houston’s Chicago-Style Spinach Dip is the shiz. I think we’d also all agree that we can’t have it as often as we’d like due to time, distance, or simple lack of funds.
Fortunately for us, the Hutchison class of 2001 foresaw our dilemma and included it in the adorably titled “Graduate and Be Glad You Ate.” Make sure you pick up some sour cream, salsa and well-salted tortilla chips. Just wouldn’t be the same without the trimmings.
2 packages frozen chopped spinach, cooked and drained
1.5 cans artichokes, chopped and drained
1 onion, chopped
1 stick of butter
1/2 tspn cayenne pepper
salt, pepper and garlic powder to taste
8 oz cream cheese
8 oz shredded monterey jack
4 oz shredded swiss cheese
4 oz shredded mozzarella cheese
4-6 oz heavy whipping cream
4 oz shredded parmesan cheese
Tortilla chips (If you’re in Memphis, Las Delicias has the perfect chips for this dip.)
- Saute onion in butter until tender.
- In a mixing bowl beat cream on medium speed, gradually folding in cream cheese until it forms creamy mixture.
- Add the rest of the ingredients except the parmesan cheese and mix well.
- Marinate in fridge at least 2 hours (the longer the better).
- Preheat oven to 325.
- Top with parmesan and heat until bubbly.
